Head Brewer Jimmy Swan is rather taken with the honey, spicy, earthy notes of Herefordshire-grown Goldings hops. This long-established variety grows well in the county. The Goldings for Swan Fine Day are all grown by the Hawkins family at The Farm in Bosbury. To craft an ale where the notes of the Goldings hops sing through, Swan Fine Day is triple hopped. Hop cones are introduced at the beginning and end of the boiling process of the wort in the copper, with further Goldings being added to the fermentation vessel when the fermentation is complete and the ale is conditioning. This thoughtful approach creates a beautifully balanced hop character to the ale.
The blend of grains has also been selected with precision to feature pale Maris Otter, plus amber, chocolate and crystal malts. The combination of these malts creates a deep golden-to-amber ale with a nutty bite.
Swan Fine Day will be back as a seasonal brew in 2022. Hopefully you may be able to enjoy it up at The Harp at Old Radnor, a lovely old Welsh longhouse inn perched on a hilltop overlooking the beautiful Radnor Valley, close to the Powys/Herefordshire border.
