Creating the beery magic is Head Brewer Jimmy Swan who has now been a brewer for almost 30 years. Originally a biochemist by degree, he was in the Class of 1995 at Heriot Watt, gaining his postgraduate Diploma in Brewing and Distilling (with distinction), before starting work in the industry. Here’s an outline of his brewing credentials, which have brought him here to Herefordshire in the Head Brewer role at Swan Brewery, which he jointly founded.

Jimmy’s a fan of traditional English ales. Judging by the recycling at home, Arm Breaker 6% quintessential English IPA is his favourite take home ale. On draught, he likes to raise a glass of our flagship ale, Swan Gold.
Partner in life and business, Gill Bullock looks after sales, marketing and finance. You might also find her as “dray lady” for the day, assisting with deliveries; behind the bar in the brewery tap or at food fairs and festivals, or staffing the shop. Gill’s favourite bottled beer is Black Swan and on draught, in contrast, she enjoys Swan Blonde.
Jacob joined as brewing assistant, mainly supporting Jimmy on cask washing and filling, stock management and vessel cleaning. Jacob enjoys stacking full, 55kg casks. Jacob’s short list of beers he enjoys isn’t that short, but when pressed he thinks Bewick’s Best is his favourite. We’ve recently been joined by Liam as a production assistant and Scott as a delivery driver.
